Anyone who loves ratatouille, knows that there is a real art to getting the tomatoes just right so that they are not acidic but still retain their flavour. Next, salmon with ratatouille and scalloped potatoes on the side. Next, I had polenta with chanterelle mushrooms and baby courgette with a sprinkling of mixed greens dressed ever-so-lightly (Romain’s salad dressings are always extraordinary). The addition of a few small salty olives in addition to a slight amount of anchovies makes this sublime. Romain knows just how to cook it so that the crust is crunchy but still possible to cut and the onions retain their shape.
